“You have celiac disease,” my doctor told me after a decade of mysterious health challenges, including exhaustion, severe stomach pain, brain fog, body inflammation, and a long list of other seemingly disconnected symptoms. Celiac disease is a chronic autoimmune condition where the ingestion of gluten damages the small intestine, which leads to inadequate nutrient absorption and subsequent health complications. As a high-performing athlete and a former Division 1 volleyball player, I always assumed I was just pushing myself and training hard, but the diagnosis confirmed my body was fighting a tougher battle. While my diagnosis brought so much clarity for me, it also completely changed the trajectory of my life. After years of preparation, training, and graduating from the U.S. Military Academy - West Point, my Army officer aspirations were cut short. Since my diagnosis, though, I’ve become more crumb conscious - understanding the hidden sources of gluten and the everyday realities of navigating a strict dietary restriction. Now, as a wife and working mom in Maple Grove, MN, I use my baking to raise awareness about celiac disease and to prove that gluten free living can be both healing and indulgent.
